Creamy Butternut Squash Soup (Dairy-Free)

  • 1 large butternut squash (about 1.4 kg / 3 lb), halved lengthwise and seeded2 tablespoons extra virgin olive oil, divided1 teaspoon fine sea salt, divided, plus more to taste1/2 teaspoon freshly ground black pepper1 large yellow onion, roughly chopped (about 1 1/2 cups)2 medium carrots, peeled and chopped2 celery stalks, chopped4 garlic cloves, peeled and smashed1 tablespoon grated fresh ginger1/2 teaspoon ground cinnamon1/4 teaspoon ground nutmeg1/4 teaspoon cayenne pepper (optional)4 cups (960 ml) low sodium vegetable broth1 can (400 ml) full fat coconut milk, shaken well1 tablespoon pure maple syrup1 tablespoon apple cider vinegar12 fresh sage leaves1/3 cup raw pepitas (pumpkin seeds)

Instructions

  1. Heat the oven to 400 F (200 C) and line a large rimmed baking sheet with parchment paper. Rub the cut sides of the squash with 1 tablespoon of the olive oil, 1/2 teaspoon of the salt, and all of the black pepper. Place the halves cut side down on the sheet and roast for 40 to 45 minutes, until deeply caramelized at the edges and completely fork tender.While the squash roasts, heat the remaining tablespoon of olive oil in a large Dutch oven or heavy pot over medium heat. Add the onion, carrots, and celery with the remaining 1/2 teaspoon of the salt. Cook for 8 to 10 minutes, stirring occasionally, until softened and golden at the edges.Add the garlic, ginger, cinnamon, nutmeg, and cayenne if using. Stir constantly for 1 minute until intensely fragrant. Blooming the spices in the hot oil like this wakes up their flavor far better than adding them to liquid.Pour in the vegetable broth, scraping up any browned bits from the bottom of the pot with a wooden spoon. Bring to a gentle boil, then reduce the heat and simmer for 15 minutes, until the carrots and celery are completely tender.Scoop the roasted squash flesh away from the skins and add it to the pot along with 3/4 cup of the coconut milk. Discard the skins. The squash should be so soft it nearly collapses when scooped.Blend until completely silky: use an immersion blender directly in the pot for 2 to 3 full minutes, or transfer the soup to a countertop blender in batches. If using a countertop blender, vent the lid and cover it with a towel, since hot soup expands.Stir in the maple syrup and the apple cider vinegar. Taste carefully and adjust with more salt as needed. If the soup feels too thick, whisk in a splash of warm broth until it flows like heavy cream.Crisp the sage: heat 1 tablespoon of olive oil in a small skillet over medium high heat until shimmering. Fry the sage leaves for 20 to 30 seconds until crisp and darkened, working in two batches if needed. Drain on a paper towel and sprinkle lightly with salt.Toast the pepitas in a dry skillet over medium heat for 3 to 4 minutes, shaking often, until they pop and turn golden. Watch them closely, since they go from toasted to burnt quickly.Ladle the hot soup into warm bowls. Swirl a spoonful of the remaining coconut milk over each serving, then top with crispy sage leaves and toasted pepitas. Serve immediately.
