Spiced Pumpkin Baked Oatmeal with Toasted Pecans

  • 2 cups old-fashioned rolled oats
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 1/2 cups milk of choice
  • 2 large eggs
  • 1/3 cup pure maple syrup, plus more for serving
  • 1/4 cup packed brown sugar
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 3/4 cup pecan halves, toasted and roughly chopped, divided
  • Greek yogurt, for serving (optional)

Instructions

  1. Heat the oven to 375°F (190°C) and lightly grease a 9-inch square baking dish.
  2. Toast the pecans 5-6 minutes until fragrant, chop roughly.
  3. In a large bowl, whisk pumpkin puree, milk, eggs, maple syrup, brown sugar, melted butter, and vanilla until smooth.
  4. Sprinkle cinnamon, ginger, nutmeg, cloves, baking powder, and salt over the wet mixture and whisk to distribute.
  5. Fold in rolled oats and half the pecans.
  6. Pour into the baking dish, smooth the top, sprinkle remaining pecans.
  7. Bake 38-42 minutes until the center is set and edges pull slightly from the dish.
  8. Rest 10 minutes before slicing. Serve warm with Greek yogurt and maple syrup.
