Quinoa Stuffed Acorn Squash

  • 2 medium acorn squash, halved lengthwise and seeded2 tablespoons extra virgin olive oil, divided1 teaspoon fine sea salt, divided1/2 teaspoon freshly ground black pepper1 cup quinoa, rinsed well2 cups low sodium vegetable broth1 medium yellow onion, finely diced2 celery stalks, finely diced1 large apple, cored and cut into 1/2 inch dice2 cups packed chopped kale leaves3 garlic cloves, minced1 teaspoon fresh thyme leaves1/2 teaspoon ground cinnamon1/4 teaspoon ground nutmeg1/3 cup dried cranberries1/2 cup pecans, toasted and roughly chopped2 tablespoons pure maple syrup1/3 cup crumbled goat cheese, optional

Instructions

  1. Heat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.Rub the squash halves with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and the pepper. Roast cut side down for 20 minutes.Simmer the rinsed quinoa in the vegetable broth for 15 minutes, covered. Rest 5 minutes off the heat, then fluff with a fork.Saute the onion and celery in the remaining oil for 5 minutes until softened.Add the apple, kale, garlic, thyme, cinnamon, and nutmeg. Cook 4 to 5 minutes until the kale wilts.Fold the vegetables together with the cooked quinoa, cranberries, pecans, maple syrup, and remaining salt. Taste and adjust.Flip the squash cut side up and divide the filling among the halves, mounding generously.Bake 15 to 18 minutes until the edges caramelize and the tops turn golden in spots.Rest 5 minutes, sprinkle with goat cheese and thyme, and serve warm.
