Maple Roasted Brussels Sprouts with Cranberries and Pecans

Crispy maple roasted Brussels sprouts with cranberries and toasted pecans.

  • 2 lbs Brussels sprouts, trimmed and halved
  • 3 tbsp extra-virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 3 tbsp pure maple syrup
  • 1 tbsp balsamic vinegar
  • 2/3 cup dried cranberries
  • 2/3 cup pecan halves, toasted
  • 1 tsp orange zest (optional)
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, toss the halved Brussels sprouts with olive oil, salt and black pepper until evenly coated.
  3. Arrange cut-side down in a single layer without crowding.
  4. Roast 20 minutes until edges turn golden and crisp.
  5. Flip the sprouts, scatter cranberries and pecans over the pan, then drizzle with maple syrup and balsamic vinegar.
  6. Roast 8 to 10 minutes more until the glaze bubbles and the nuts smell toasted.
  7. Rest 5 minutes on the pan so the glaze sets slightly.
  8. Shower with orange zest and red pepper flakes if using.
  9. Serve warm straight from the pan or a serving platter.
