Plate of golden healthy thumbprint cookies filled with glossy red raspberry jam on a Christmas table with pine sprigs and fresh raspberries

Healthy Thumbprint Cookies

Buttery, tender thumbprint cookies made lighter with almond flour, coconut sugar and a smaller amount of real butter, filled with glossy raspberry jam. A no-crack method, no refined sugar, and a crumb that stays soft for days. The prettiest cookie on the Christmas tray.

  • Total Time: 50 minutes
  • Yield: 24 cookies 1x

Ingredients

Scale
  • 6 tablespoons (85 g) unsalted butter, softened
  • 2 tablespoons coconut oil, melted and cooled slightly
  • 1/2 cup (80 g) coconut sugar (or light brown sugar)
  • 1 large egg yolk, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/2 teaspoon lemon zest
  • 1 cup (120 g) white whole wheat flour (or all purpose flour)
  • 3/4 cup (75 g) fine almond flour
  • 1/4 teaspoon fine sea salt
  • 1/2 cup (160 g) raspberry jam, 100% fruit or reduced sugar
  • 1 teaspoon powdered monk fruit or powdered sugar, for dusting (optional)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper.
  2. Beat the softened butter, coconut oil and coconut sugar in a large bowl for about 2 minutes, until pale and fluffy.
  3. Beat in the egg yolk, vanilla extract, almond extract and lemon zest until smooth and glossy.
  4. Whisk the white whole wheat flour, almond flour and sea salt in a separate bowl, then fold into the butter mixture until a soft dough forms. Chill for 15 minutes if the dough feels sticky.
  5. Roll the dough into 24 balls, about 1 tablespoon each, rolling each one between your palms until completely smooth. Arrange 2 inches apart on the prepared sheets.
  6. Press a deep well into the center of each ball with your thumb, a wine cork or the round back of a teaspoon, smoothing any big cracks as you go.
  7. Bake for 10 minutes, until set but still pale. Remove the sheets and gently re-press each well with the teaspoon, since the centers puff up as they bake.
  8. Return to the oven for 2 to 3 more minutes, until the edges turn the faintest golden color. Cool on the sheets for 5 minutes, then move to a rack.
  9. Warm the jam for 20 seconds in the microwave and stir until pourable. Spoon about 1/2 teaspoon into each well and let the cookies rest 20 minutes so the jam sets glossy. Dust lightly if you like, and serve.
