Healthy Sweet Potato Casserole

Creamy healthy sweet potato casserole with roasted (never boiled) sweet potatoes, Greek yogurt, orange zest, fresh ginger, and a crisp oat-pecan streusel. The Thanksgiving side that converts skeptics.

  • 3 lbs sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp kosher salt, divided
  • 1/2 cup plain Greek yogurt (2% or whole milk)
  • 3 tbsp pure maple syrup
  • 1 tbsp fresh orange juice
  • 1 tsp orange zest
  • 1 tsp freshly grated ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp black pepper
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup chopped pecans
  • 3 tbsp coconut sugar (or brown sugar)
  • 3 tbsp melted coconut oil (or butter)
  • 1/2 tsp ground cinnamon (for streusel)
  • 1/4 tsp kosher salt (for streusel)

Instructions

  1. Preheat the oven to 425°F (220°C). Toss the sweet potato cubes with the olive oil and 1/2 teaspoon of the salt on a large rimmed baking sheet, spreading them in a single layer.
  2. Roast for 25 to 30 minutes, flipping once halfway, until the cubes are deeply caramelized at the edges and completely tender when pierced with a fork.
  3. Reduce the oven temperature to 375°F (190°C). Transfer the hot roasted cubes to a large bowl.
  4. Add the Greek yogurt, maple syrup, orange juice, orange zest, grated ginger, cinnamon, nutmeg, black pepper, and the remaining 1/2 teaspoon of salt.
  5. Mash with a potato masher until mostly smooth with a few rustic chunks remaining. Taste and adjust sweetness or salt if needed.
  6. In a separate bowl, stir together the oats, chopped pecans, coconut sugar, melted coconut oil, cinnamon, and salt until every crumb is coated and clumpy.
  7. Spread the mashed sweet potatoes evenly in a greased 9×13 inch (or 2-quart) baking dish. Sprinkle the streusel evenly over the top, edge to edge.
  8. Bake for 20 to 25 minutes, until the streusel is golden and crisp and the edges bubble gently.
  9. Rest for 10 minutes before serving so the casserole sets. Serve warm. Leftovers keep 4 days refrigerated.
