Healthy spinach artichoke dip baked golden in a white dish, surrounded by cucumber rounds, pepper strips, carrot sticks and pita on a Christmas party table

Healthy Spinach Artichoke Dip, Bubbly and Golden at About 110 Calories

The hot, bubbly spinach artichoke dip of every December party, rebuilt on Greek yogurt and light cream cheese with no mayonnaise at all. Real Parmesan and mozzarella keep the flavor and the cheese pull, the spinach is squeezed properly dry so the dip bakes thick, and a quarter cup serving lands at about 110 calories with 8 grams of protein, roughly half the classic. Make it three days ahead, or hold it warm in a slow cooker all evening.

  • Total Time: 35 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 10 ounces frozen chopped spinach, thawed
  • 1 can (14 ounces) artichoke hearts in water, drained and roughly chopped
  • 1 cup plain Greek yogurt, 2 percent
  • 4 ounces light cream cheese, softened at room temperature
  • 1/2 cup shredded part skim mozzarella, divided
  • 1/4 cup finely grated Parmesan, plus 1 tablespoon more for the top
  • 2 green onions, thinly sliced
  • 2 garlic cloves, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika, optional, for the top
  • Pinch of red pepper flakes, optional

Instructions

  1. Heat the oven to 375°F. Set out a 1 quart baking dish or an 8 inch oven safe skillet.
  2. Squeeze the thawed spinach twice: press it hard in a strainer, then wrap it in a clean towel and wring it over the sink until it feels almost dry.
  3. Chop the drained artichoke hearts into bite size pieces and pat them dry with a paper towel.
  4. In a large bowl, beat the softened light cream cheese and Greek yogurt together until completely smooth, with no white streaks left.
  5. Stir in the lemon juice, garlic, salt, pepper and red pepper flakes if using.
  6. Fold in the spinach, artichokes, green onions, half of the mozzarella and the quarter cup of Parmesan, mixing until the vegetables are evenly distributed.
  7. Spread the mixture in the dish and smooth the top. Scatter the remaining mozzarella and the extra tablespoon of Parmesan over it, then dust with smoked paprika.
  8. Bake for 20 to 25 minutes, until the edges bubble steadily and the top has golden spots.
  9. Rest the dip for 5 minutes so it sets to a scoopable consistency, then serve warm with cucumber rounds, pepper strips, carrot sticks and toasted pita triangles.
