Healthy Pumpkin Pie

  • 1 1/2 cups rolled oats
  • 1/2 cup oat flour
  • 1/4 cup pure maple syrup (for the crust)
  • 1/3 cup unsalted butter, melted
  • 1/2 teaspoon ground cinnamon (for the crust)
  • 1/4 teaspoon fine sea salt (for the crust)
  • 1 can (15 ounces) pumpkin puree, not pumpkin pie filling
  • 2 large eggs, at room temperature
  • 3/4 cup pure maple syrup (for the filling)
  • 1/2 cup evaporated milk
  • 1 teaspoon pure vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/4 teaspoon fine sea salt (for the filling)

Instructions

  1. Preheat the oven to 350F (175C). Lightly grease a 9 inch pie dish.
  2. Pulse the rolled oats in a food processor into a coarse flour, 15 to 20 pulses.
  3. Add the oat flour, cinnamon, and salt. Pulse in the melted butter and maple syrup until the mixture holds together when pinched.
  4. Press firmly and evenly into the pie dish, building the edge slightly higher than the filling will reach.
  5. Whisk the pumpkin puree, eggs, and maple syrup until completely smooth.
  6. Whisk in the evaporated milk and vanilla, then the cinnamon, ginger, nutmeg, cloves, and salt until no streaks remain.
  7. Pour the filling into the unbaked crust. Tap gently to release air bubbles.
  8. Bake 50 to 60 minutes, until the edges are set and the center still wobbles slightly.
  9. Cool completely on a wire rack for at least 2 hours. Do not refrigerate while warm.
  10. Refrigerate at least 4 hours, ideally overnight. Serve chilled with whipped cream and cinnamon.
