- 1/4 cup raw cacao powder, plus 1 tablespoon for dusting
- 1/4 cup creamy almond butter, unsweetened and no-stir
- 3 tablespoons pure maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/8 teaspoon fine sea salt
- 1 cup dark chocolate chips, 70% cacao
- 1 teaspoon coconut oil
- 2 tablespoons crushed freeze-dried raspberries, for topping (optional)
Instructions
- Whisk the almond flour, cacao powder, and fine sea salt in a medium bowl until no lumps remain.
- Add the almond butter, maple syrup, vanilla extract, and peppermint extract, then stir until a thick, uniform dough forms.
- Press the dough with your hands to check the texture; it should hold a ball without cracking. If dry, add maple syrup half a teaspoon at a time.
- Cover and refrigerate the dough for 20 minutes to firm the almond butter for easy rolling.
- Line a baking sheet with parchment. Scoop level tablespoons of dough and roll into smooth balls; you should get about 16 truffles.
- Freeze the rolled truffles for 15 minutes so the firm centers dip cleanly without melting.
- Combine the dark chocolate chips and coconut oil in a microwave-safe bowl; microwave in 30-second bursts, stirring between each, until melted and glossy.
- Dip each frozen truffle with a fork, tap off the excess chocolate, and return to the parchment.
- Sprinkle with crushed freeze-dried raspberries or cacao powder before the coating sets. Refrigerate 10 minutes until firm, then serve or store.
