Mug of healthy peppermint mocha with frothed milk and a dusting of cocoa, a candy cane resting on the saucer, with coffee beans and fresh mint on a dark Christmas table

Healthy Peppermint Mocha

A coffee shop style peppermint mocha rebuilt the light way: strong coffee, skim or oat milk bloomed with real cocoa, a measured spoon of maple syrup and exactly 1/8 teaspoon of peppermint extract. About 130 calories a mug against roughly 440 at the coffee shop, with real froth and no syrup pumps.

  • Total Time: 10 minutes
  • Yield: 2 servings 1x

Ingredients

Scale
  • 2 cups (480 ml) strong brewed coffee, or 4 shots of espresso topped up with hot water
  • 1 1/2 cups (360 ml) skim milk or oat milk, divided
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup, plus more to taste
  • 1/8 teaspoon pure peppermint extract
  • 1/2 teaspoon vanilla extract
  • 1 small pinch of fine sea salt
  • 2 teaspoons shaved dark chocolate or a dusting of cocoa, to serve (optional)

Instructions

  1. Brew the coffee strong and keep it hot while you make the cocoa milk.
  2. Pour 1 cup (240 ml) of the milk into a small saucepan and whisk in the cocoa powder, maple syrup and salt until no dry pockets remain.
  3. Warm over medium heat, whisking often, until the milk steams and smells like hot chocolate, 3 to 4 minutes. Do not let it boil.
  4. Remove from the heat and stir in the peppermint extract and the vanilla. Taste and adjust the maple only; never add more mint beyond 1/4 teaspoon total.
  5. Warm the remaining 1/2 cup (120 ml) of milk and froth it with a whisk, a frother or by shaking it in a sealed jar until it doubles in volume.
  6. Divide the coffee between two mugs, pour the hot cocoa milk over it and stir once.
  7. Spoon the froth over each mug, finish with shaved dark chocolate or a dusting of cocoa, and serve immediately.
