Ingredients
Scale
- 1 1/2 cups fine blanched almond flour
- 1/4 cup coconut oil, melted (or unsalted butter, melted)
- 2 tablespoons pure maple syrup
- 1/4 teaspoon fine sea salt
- 2 to 3 tablespoons cold water, as needed
- 2 1/2 cups pecan halves, divided
- 3/4 cup pure maple syrup
- 3 large eggs, at room temperature
- 1/4 cup coconut oil, melted (or unsalted butter, melted)
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon fine sea salt
- 1 tablespoon arrowroot powder or cornstarch
Instructions
- Preheat the oven to 350°F. Toast the pecan halves on a rimmed baking sheet for 8 minutes until fragrant. Cool completely and reserve 1/2 cup of the prettiest halves for the top.
- Whisk the almond flour and salt in a medium bowl. Stir in the melted coconut oil and maple syrup, then add cold water one tablespoon at a time until the dough holds together.
- Press the dough evenly into a 9-inch pie dish, building it up the sides. Refrigerate for 15 minutes.
- Par bake the crust for 10 to 12 minutes until lightly golden at the edges. Keep the oven at 350°F.
- Whisk the maple syrup, eggs, melted coconut oil, vanilla, cinnamon, salt and arrowroot until completely smooth.
- Scatter 2 cups of toasted pecans over the par baked crust and pour the filling evenly over them.
- Arrange the reserved pecan halves in decorative circles on top, pressing gently into the filling.
- Bake for 35 to 40 minutes, until the edges are set and puffed but the center still trembles slightly.
- Cool completely on a wire rack for 3 to 4 hours before slicing, as the filling firms up while cooling.
