  • 2 lbs fresh green beans, trimmed and cut into 2-inch pieces
  • 2 large shallots, thinly sliced into rings (for the baked crispy topping)
  • 1 tbsp olive oil, plus more for the pan
  • 8 oz cremini mushrooms, sliced
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 3 tbsp all-purpose flour (or arrowroot powder for gluten-free)
  • 1 1/2 cups low-sodium vegetable broth
  • 1 cup unsweetened almond milk (or low-fat dairy milk)
  • 1/2 tsp dried thyme
  • 1 tsp kosher salt, divided
  • 1/2 tsp black pepper
  • 1/3 cup whole-grain breadcrumbs
  • Cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly coat a rimmed baking sheet with cooking spray. Slice the shallots into thin, even rings, about an eighth of an inch thick. Even slicing matters, since thin spots burn while thick spots stay soft.
  2. Toss the shallot rings with 1 tablespoon of olive oil and 1/4 teaspoon of the salt, separating the rings with your fingers. Spread them in a single layer on the prepared sheet, giving each ring a little breathing room. Bake for 12 to 15 minutes, flipping once halfway, until deep golden and crisp.
  3. Bring a large pot of generously salted water to a rolling boil. Add the trimmed green beans and blanch for 4 minutes, until bright green and just tender with a slight bite. Drain immediately and rinse under cold water to stop the cooking and lock in the color.
  4. Warm a drizzle of olive oil in a large skillet over medium heat until shimmering. Add the sliced mushrooms in a single layer and cook undisturbed for 3 minutes before stirring. Continue cooking for 3 more minutes until deeply browned and their released liquid has fully evaporated.
  5. Stir in the diced onion and cook for 4 minutes, until soft and translucent at the edges. Add the minced garlic and dried thyme, stirring constantly for 30 seconds until fragrant. Do not let the garlic brown, since bitter garlic will haunt the whole sauce.
  6. Sprinkle the flour evenly over the vegetables and stir for 1 minute to coat everything in a pale roux. This brief cooking step removes any raw flour taste from the finished sauce. The mixture will look dry and clumpy, which is exactly right.
  7. Slowly pour in the vegetable broth, whisking constantly to dissolve the roux without lumps. Whisk in the almond milk, then bring the sauce to a gentle simmer. Cook for 5 to 7 minutes, stirring often, until it thickens enough to coat the back of a spoon. Season with the remaining 3/4 teaspoon of salt and the black pepper.
  8. Fold the blanched green beans into the sauce, turning gently until every bean is coated. Transfer the mixture to a lightly greased 9×13 inch baking dish and spread it level. The dish will look generously full, which is perfect.
  9. Sprinkle the breadcrumbs evenly over the surface, edge to edge. Scatter the baked crispy shallots across the top in an even layer. Resist the urge to press them down, since a loose topping crisps better.
  10. Bake for 18 to 20 minutes, until the sauce bubbles at the edges and the topping turns deep golden. If the shallots brown too quickly, tent the dish loosely with foil for the final minutes. Rest the casserole for 10 minutes before serving so the sauce sets.
