Glass jar and small bowl of healthy gingerbread granola with big golden clusters, pecans and dried cranberries, with Christmas pine greenery around

Healthy Gingerbread Granola

Gingerbread granola built for real clusters: rolled oats, pecans and pumpkin seeds pressed in a maple molasses glaze, baked low and cooled untouched. Warm ginger forward spice, about 8 grams of sugar per serving, and a batch that fills six gift jars for Christmas.

  • Total Time: 50 minutes
  • Yield: About 6 cups, 18 servings 1x

Ingredients

Scale
  • 4 cups (360 g) old fashioned rolled oats
  • 1 cup (110 g) raw pecan halves, roughly chopped
  • 1/2 cup (70 g) pumpkin seeds (pepitas)
  • 1/2 cup (40 g) unsweetened coconut flakes
  • 2 tablespoons ground flaxseed
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon fine sea salt
  • 1/3 cup (80 ml) melted coconut oil, or light olive oil
  • 1/3 cup (80 ml) pure maple syrup
  • 2 tablespoons molasses, not blackstrap
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (75 g) dried cranberries, added after baking
  • 1 teaspoon orange zest, optional, added with the cranberries

Instructions

  1. Preheat the oven to 300 degrees F (150 degrees C). Line a large rimmed baking sheet with parchment paper, letting the paper come up the sides.
  2. Combine the oats, pecans, pumpkin seeds, coconut flakes, flaxseed, ginger, cinnamon, cloves, nutmeg and salt in a large mixing bowl. Stir until the spices coat everything evenly.
  3. Whisk the melted coconut oil, maple syrup, molasses and vanilla in a small saucepan over low heat for 1 minute, just until fluid and fragrant.
  4. Pour the warm glaze over the oat mixture. Stir with a sturdy spatula for a full minute, until no dry pockets remain and every flake looks glossy.
  5. Tip the mixture onto the prepared pan. Press it down firmly with the back of the spatula into one even slab, about 1/2 inch thick, with no gaps.
  6. Bake for 20 minutes. Rotate the pan 180 degrees for even color, but do not stir. Bake 12 to 15 minutes more, until the edges are deep golden and the center looks dry.
  7. Cool the pan on a rack for at least 1 hour without touching it. The glaze sets as it cools and welds the slab into clusters.
  8. Break the slab into clusters with your hands. Fold in the dried cranberries and the orange zest, if using, and transfer to jars.
