- 2 cups old-fashioned rolled oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon fine sea salt
- 1 3/4 cups unsweetened almond milk
- 1/2 cup fresh orange juice
- 1 tablespoon finely grated orange zest
- 1/3 cup pure maple syrup, plus more for serving
- 2 large eggs, lightly beaten
- 1 teaspoon pure vanilla extract
- 1 1/2 cups fresh or frozen cranberries
- 1/2 cup chopped pecans, plus 2 tablespoons for topping
Instructions
- Preheat the oven to 375F and grease a 9 by 13 inch baking dish.
- Zest the orange to get 1 tablespoon of zest, then juice the oranges for 1/2 cup of juice.
- Whisk the oats, baking powder, cinnamon, nutmeg, and salt in a large bowl.
- Whisk the almond milk, orange juice, zest, maple syrup, eggs, and vanilla in a second bowl until smooth.
- Pour the wet mixture over the dry mixture and stir gently just until moistened.
- Fold in the cranberries and 1/2 cup of chopped pecans.
- Spread into the prepared dish and sprinkle the remaining pecans on top.
- Bake 33 to 38 minutes until golden and the center is just set.
- Rest 10 minutes before cutting into squares.
- Serve warm with maple syrup, milk, or Greek yogurt.
