- 8 cups cubed day-old cornbread, 1-inch cubes
- 2 tablespoons olive oil, plus 1 tablespoon butter
- 1 large yellow onion, diced
- 3 celery stalks, diced
- 2 garlic cloves, minced
- 1 tablespoon chopped fresh sage
- 2 teaspoons fresh thyme leaves
- 1 teaspoon minced fresh rosemary
- 2 cups low-sodium vegetable or chicken broth
- 2 large eggs, lightly beaten
- 3/4 cup dried cranberries
- 3/4 cup pecans, toasted and roughly chopped
- 1 teaspoon fine sea salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- Cut day-old cornbread into 1-inch cubes. If fresh, dry at 300F for 20 to 25 minutes until firm.
- Preheat the oven to 375F and grease a 9 by 13 inch baking dish.
- Heat the olive oil and butter in a large skillet over medium heat.
- Saute the onion and celery with a pinch of salt for 7 to 8 minutes until soft and golden.
- Stir in the garlic, sage, thyme, and rosemary and cook 1 minute more.
- Combine the vegetables with the cornbread cubes in a very large bowl and toss gently.
- Whisk the eggs into the broth, pour over the cubes, and add cranberries, pecans, salt, and pepper.
- Fold gently, then rest 10 minutes so the cubes absorb the broth.
- Transfer to the dish, cover with foil, and bake 25 minutes.
- Uncover and bake 15 to 20 minutes more until deeply golden and crisp on top. Rest 10 minutes before serving.
