Ingredients
Scale
- 4 hibiscus tea bags
- 3 cups (720 ml) hot water, for the tea
- 2 tablespoons fresh ginger, finely grated
- 1 1/2 cups (360 ml) unsweetened cranberry juice, 100 percent cranberry
- 2 cups (480 ml) orange juice, freshly squeezed or 100 percent juice
- 1 cup (240 ml) pineapple juice, 100 percent juice
- 2 tablespoons fresh lime juice
- 2 cups (480 ml) sparkling water, well chilled
- 1 cup fresh cranberries, for the ice ring and garnish
- 1 orange, thinly sliced into wheels, for the ice ring and garnish
- 4 fresh rosemary sprigs, for the ice ring and garnish
- Ice cubes, for serving
Instructions
- Make the ice ring a day ahead: stir 1 cup of water with a handful of cranberries, several orange wheels and 2 rosemary sprigs in a bundt pan. Freeze until completely solid, at least 8 hours.
- Pour the hot water over the hibiscus tea bags and grated ginger in a heatproof pitcher. Steep for 10 full minutes, then lift out the bags and strain out the ginger.
- Stir the cranberry juice, orange juice, pineapple juice and lime juice into the warm hibiscus tea. Taste: it should be vividly tart, because the sparkling water will soften it later.
- Cover and refrigerate the base for at least 2 hours, or up to 2 days. Cold base is non negotiable for a bright, fizzy result.
- Just before serving, unmold the ice ring into your punch bowl by running warm water over the pan for 10 seconds. Pour the chilled base over it.
- Add the sparkling water slowly down the side of the bowl and stir once, gently. Scatter the remaining cranberries, orange wheels and rosemary over the top and serve within 30 minutes for best fizz.
