Healthy Almond Snowball Cookies

Buttery, crisp almond snowball cookies made with almond flour and toasted walnuts, rolled twice in a snowy sweet coating. A lighter Christmas classic, ready in 30 minutes.

  • Total Time: 30 minutes
  • Yield: 30 cookies 1x

Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (60g) powdered monk fruit sweetener, plus 1/3 cup more for rolling
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon almond extract
  • 2 cups (200g) fine blanched almond flour
  • 1/4 teaspoon fine sea salt
  • 3/4 cup (85g) walnuts, toasted and finely chopped

Instructions

  1. Heat the oven to 325°F (165°C) and line a large baking sheet with parchment paper.
  2. Toast the walnuts on the baking sheet for 5 to 6 minutes until fragrant, then cool and chop finely.
  3. Beat the softened butter with 1/2 cup powdered sweetener for 2 minutes until pale and fluffy.
  4. Beat in the vanilla and almond extracts just until combined.
  5. Fold in the almond flour and salt until a cohesive dough forms.
  6. Fold in the chopped walnuts, then chill the dough for 15 minutes.
  7. Roll tablespoon-sized portions into smooth 1-inch balls and space 1 inch apart on the baking sheet.
  8. Bake for 11 to 13 minutes until the bottoms are barely golden and the tops look set.
  9. Cool 5 minutes on the baking sheet, then roll the warm cookies in the reserved powdered sweetener.
  10. Transfer to a wire rack to cool completely.
  11. Roll once more in sweetener for the thick snowy finish.
