Glass jars of cranberry orange chia pudding layered with deep red cranberry compote, topped with fresh cranberries and orange zest

Cranberry Orange Chia Pudding

The Christmas morning jar that is built the night before: a calm orange and vanilla chia base marbled with a jewel red cranberry compote simmered from fresh berries. About 195 calories a jar with 9 grams of fiber and 7 grams of protein, sweetened with three measured tablespoons of maple for four jars and no canned sauce anywhere. Whisk it twice, chill it overnight, and serve it cold while the rest of the holiday is still asleep.

  • Total Time: 4 hours 25 minutes
  • Yield: 4 jars 1x

Ingredients

Scale
  • 1 1/2 cups fresh cranberries, about 5 ounces, plus a few extra for serving
  • 1/3 cup fresh orange juice, from 1 large orange
  • 1 teaspoon orange zest, finely grated, plus more for serving
  • 3 tablespoons pure maple syrup, divided
  • 1/2 cup chia seeds
  • 1 1/2 cups unsweetened almond milk
  • 1/2 cup plain Greek yogurt, 2 percent, or thick coconut yogurt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1 pinch fine sea salt

Instructions

  1. Combine the cranberries, orange juice and 1 tablespoon of the maple syrup in a small saucepan over medium heat.
  2. Cook for 7 to 8 minutes, stirring now and then, until most of the berries have burst and the sauce looks glossy and thick. Mash a few stubborn berries against the side of the pan.
  3. Stir in half the orange zest, scrape the compote into a small bowl, and let it cool completely, about 20 minutes.
  4. In a medium bowl, whisk the almond milk, Greek yogurt, remaining 2 tablespoons of maple syrup, vanilla, cinnamon, salt and the rest of the zest until smooth.
  5. Pour in the chia seeds and whisk for a full 30 seconds, scraping the bottom of the bowl where seeds like to hide.
  6. Rest the bowl for 10 minutes, then whisk again thoroughly. This second whisk keeps the pudding free of lumps.
  7. Spoon half the chia base into 4 small jars. Add a spoonful of cooled compote to each, then top with the remaining base.
  8. Drag a table knife once through each jar for a marbled swirl, or leave the layers plain and defined.
  9. Cover and refrigerate for at least 4 hours, ideally overnight, until the pudding holds a spoon instead of pouring.
  10. Serve cold, crowned with the last of the compote, a few fresh cranberries and a pinch of orange zest.
